I have never been very keen on shortcuts, but I remember being able to take shortcuts at Bowser Castle 3 on Mario Kart: Super Circuit and the shortcut right after the start in Rainbow Road 64, between 30% and 50%. The one that I try the most is the mushroom super jump in Rainbow Road, MK:SC.
